Vanilla coconut almond granola

Here is the recipe for our favorite granola. Its an adaptation of a recipe I found many years ago. But we've tweaked it till we can tweak it no more.

3 cups rolled oats
1 cup unsweetened shredded coconut
1 1/2 cups chopped almonds
1/2 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/4 cup honey
1/4 cup maple syrup
1/2 coconut oil
1 teaspoon vanilla extract
1/2 teaspoon almond extract

Put dry ingredients in a large bowl, and stir them up. In a small saucepan, melt coconut oil, honey, and maple syrup on medium low heat until smooth. Turn the heat off, and add extracts. Pour liquid into dry ingredients, and mix very well. Pour granola mixture onto a cookie sheet lined with parchment paper. Bake at 300 degrees for 40 minutes. Tossing a bit after 20 minutes. Remove from oven and let cool completely to form crunchy clusters. ( our favorite ).
Serve over plain yogurt, or your favorite milk.

We loved Multnomah Falls
And the breakfast at the Doug Fir. Really good food, stumptown coffee, and they sat us on the patio by ourselves with the heat on.
I don't know what was inside
We went to Paxton Gate. And bought things.

And ate saint cupcake
